Brian Tan ,Piano Recital , November 18' 2012



Having through a lot of difficulties ,pain and troubles in my life ( not only relating to Brian's health but also other life's obstacles  ),  I learn to remain focus on my blessings instead of life's difficulties.

If I did them in reverse, I would have fallen apart. Well.. It happened few times, that I thought  these problems were all hopeless . I had my times of doubt . I didn't turn to any medication to solve my problems. My heart said medication was not an answer ( I didn't judge to others who really need them, pls don't misunderstand me) , so I turned to God. I believe He hears me. I also turned to my sisters and brothers in Christ for prayers, support and words of wisdom. To all  my brothers and sisters in Christ , I want you all to know that I am forever grateful.

Some days are more challenging than others . However my  faith, hope, and love remind me that  in Jesus Christ I am never alone.

I cling to God’s words in time of trouble :

Psalm 18 :2
The LORD is my rock, my fortress, and my savior; my God is my rock, in whom I find protection. He is my shield, the power that saves me, and my place of safety.

Seeing Brian playing piano in Recital , It is amazing and a miracle.He didn't forget which keys he has to play :) his memory is fine, his motor function is fine and he looks fine, I don’t take this moment as granted, It is Priceless !

Learning to pray and trust His will is better than mine. And ask Him to take me to His side and not ask Him to be on my side.

Veggies Recipes

Lentil Soup

1 bag (16 oz.) lentils
2 celery stalks with leafy tops
2 carrots
1 medium onion
1 medium potato (optional)
2 large bay leaves
2 teaspoons salt (or to taste)
1/2 teaspoon pepper (or to taste)
2 teaspoons  balsamic vinegar

Directions:

Wash and pick through lentils as directed. Peel
and chop or thinly slice carrots and onion. Cut tops
off celery, chop or thinly slice stalks. Peel and
chop potato. In a large pot, add all
ingredients, including celery tops, except vinegar.
Add 8-10 cups water. Bring to boil, simmer about 1
or more hours until lentils and vegetables are tender.
Add additional water during cooking as necessary,
and/or more salt and pepper if desired. When
vegetables are tender, remove celery tops and bay
leaves, add vinegar.



Roasted Winter Vegetables



1 whole fennel cut into 6 wedges
2 medium turnips — peeled and
quartered
2 carrots — cut in 1" pieces
2 parsnips — cut in 1" pieces
2 medium potatoes — peeled and quartered
2 medium onions — peeled and quartered
4 cloves garlic — peeled
olive oil
salt and pepper — to taste
Mix vegetables together and place in a single
layer, in a large roasting pan. Brush with olive oil;
sprinkle with salt and pepper; and roast for 1 hour
at 350 degrees F, turning the vegetables every 15
minutes.
Roasted Yellow Squash
1 yellow squash
2-3 Tablespoons olive oil
salt
fresh dill

Directions:

Slice the squash into halves. Score the meat (not
the skin) horizontally and diagonally; drizzle with
oil.
Sprinkle with salt and herbs. Broil for 5-10 minutes
until edges of squash start to appear brown

Nausea and Vomiting during radiation and chemo

Brian vomited daily during radiation and chemotheraphy. His total treatment ( surgery, radiation and chemotherapy) was 15 months long.
I was heart broken to see him suffering and not be able to eat. So I prayed and asked God to heal him and asked Him to open ways and give Brian strength . I started looking for informations to help him to keep down his meals.

These were few things that worked for my son during nausea and vomiting :

Step 1:
I gave him the Nausea prescription from his doctor every morning when he waked up. I waited one hour before giving him any meal. It worked for him. I did this step 3 times daily before breakfast, lunch and dinner. Brian was snacking fruit and veggies soup in between meals. One small meal at the time through out the day. I made the schedule for eating too :) this way I didn't forget what and the time to feed him.

Step 2 :
His taste changed sometimes. I served him many different kinds of healthy snack to help him coped :

- Whole wheat crackers
- Ginger snap cookies
- Dry cereals enriched vitamins
- Apple sauce
- Vanilla ice cream
- Sherbet
- Fruit Pudding
- Jello

I didn't give him candies, not even once. Avoid all cooking with strong odors.

Step 3 :
Ginger Tea !!! It worked for him. There is evidence that when taken with standard anti-nausea medications, ginger can be helpful in further reducing or eliminating nausea and vomiting during and after chemotherapy treatments. I served Brian  the ginger tea warm with a bit of honey.
You may try Agave or Stevia. I didn't know about them at that time :) so I gave him honey instead.
Tea Ginger recipe:
  • 4-10  thin slices raw organic ginger
  • 1 1/2 - 2 cups water
  • juice from 1/2 lime, or to taste
  • 1-2 tbsp honey , stevia, agave nectar  to taste

How to :

Peel the ginger and slice thinly to maximize the surface area. This will help you make a very flavorful ginger tea. Boil the ginger in water for at least 10 minutes. For a stronger and tangier tea, allow to boil for 20 minutes or more, and use more slices of ginger. Remove from heat and add lime juice and honey to taste.

Step 4 :
Fresh air and loose clothing. I played board games , watched funny TV shows , sang Jesus songs , Veggie tales series DVD , just about any activities that made him laughed so that he horgot his nausea.
I keep tracked of all the foods that made him vomited.

Step 5 :
Clean Pure Water.
I prepared 1 L water bottle daily. He would finished it the entire water 2 hours before bedtime. Once he got controlled vomitting, try small amounts of water and gradually increasing the amount.

Note:

Thank God that Brian didn't have to use feeding tube. I told Brian if he didn't want to eat, the doctor must put the feeding tube through his nose or belly. It scared him, I guess the warning worked too :) he made himself eating eventhough he wasn't hungry.


I hope our experiences will help anyone with nausea and vomitting during the radiation and chemo.

Cherish every moment !

Hello All,

Hope you all have a great Summer !

We got a great news from Brian's Oncology, it says the MRI last July 2012 looks great , no changes and remains cancer free .
Praise The Lord for this wonderful news. Brian is 6 years out from the diagnosis .

Brian is a normal 10 years old boy, he will be 11 soon by next month. He is doing well at school, making honnor roll once again. I can't believe what I see now, before the treatment his Oncology said that Brian may not be able to do school well and a slow learner because of the radiation. Once again God gives His favor to him. It's trully a miracle, grace and blessing.

Brian lost some very mild hearing at high frequency range due to chemotherapy (Cisplastin) but he still can hear at normal frequency. Therefor he doesn't require hearing aids.


During  summer 2012  Brian has been enjoying badminton and swimming. Yesss... he learns how to swim finally...he continues loving piano too.

We are thankful to Jesus Christ Living God for Brian ...,

also to our church GII and Pastors and to all our family and friends who have kindly prayed for Brian ; his Doctors at Lucille Packard and PAFM ; his great Teachers at Durham elementary schools. We always grateful for all Brian's excellent Doctors and nurses in Montreal Children Hospital, excellent treatments and loving cares.

He is now excited to return to school as a 6th grader :)

Brian's Brown Rice Fajitas

Ingredients :

1/2 teaspoon ground oregano (optional)
1/2 teaspoon paprika ( optional )
1/4 teaspoon garlic powder
1/8 teaspoon sea salt
Ground black pepper, to taste
4  BROWN RICE tortillas, about 8 inches in diameter ( Sold in Healthy Store , such as Whole Food or Raleys)
1/4 cup shredded Veggies cheese
1/2 cup Kale - chopped
1/2 cup steam brown rice
1/2 cups black bean


Directions

In a small bowl, stir together the chili powder, oregano, paprika, garlic powder, salt and pepper. Mix together steam brown rice , chopped Kale, veggies cheese with Black bean.
Fold the mixture inside the Brown Rice Tortillas
Place them flat on the cookies baking sheet in the oven 350 F until the cheese melted.
Serve

Ingredients:

2  Organic eggs
1/4 cup brocolli
1/4 cup chopped carrots
( Choose your desired Veggies )
pinch of  sea salt
1 Tbsp Almond milk

Directions:

Beat eggs until fluffy.
Fold in remaining ingredients.
Wipe Olive Oil  around non-stick omelet maker using clean paper Towel
Spoon in omelet mixture.
Bake  until eggs are set.
I served Brian’s Fav Omelet with Steam Brown Rice with chopped carrots ( No Salt added )

Healthy Raw Juice Combinations for Brian

Using Juice Extractor:

1) Beet, Celery and Cucumber

2) Cabbage, Celery and Apple

3) Tomato, Carrot, Broccoli, and Apple

4) Apple , Cucumber, Asparagus and Celery

5) Broccoli, Apple, Beet, Celery and Carrot ( Brian's routine )


Select organic Foods for juicing. Our body will absorb its nutrients better when it's liquid.
Choose deep colored, ripe, firm fruits, and vegetables.

Don't consume raw juice during the chemo periods. As the body immune system is at the lowest point or medical term " Neutropenia "

what is Neutropenia ? Immune system is at higher risk fo Infection. The medical teams will at the diffrential on CBC and WBC.

Do the juicing when the Neutro Blood Count is safe and above 1.5 ( that's what I did for Brian during chemotheraphy, strengthen his immune system too )


Play around with them to adjust to your personal taste.

Ingredients :

2 cups Organic gluten free flour ( 1 cup of  tapioca and 1 cup of brown rice )
3/4 cup Organic granulated sugar
1/2 teaspoon sea salt
1/2 teaspoon baking soda - aluminium free
1 1/2 teaspoons baking powder
1 teaspoon xanthan gum
1 Tablespoon orange zest
3/4 cup Organic orange juice
1/4 cup Organic butter
2  Organic eggs 
1 cup whole Organic cranberries
3/4 cup- 1 cup almonds chopped

DIRECTIONS:

Preheat the oven to 350 degrees. In  bowl, sift all the dry ingredients together.
Mix all the liquid ingredients together in a separate bowl.
Add the liquid ingredients to the dry ingredients and mix until just moistened.
Add the whole cranberries and 3/4 cup of chopped almonds .
Spoon the batter into a greased loaf pan and bake for about 45 minutes.
Once the bread is done, let it cool for 10 minutes in the pan before releasing to your cooling rack.

Brian's Organic Baked brown Rice with organic broccoli , carrot, and slices of cucumber


Mixed the cooked rice with chopped broccoli , carrot, and pour little bit of organic broth, can be veggie or chicken .
Sprinkle organic Mixed  spices, cumin and sea salt.
Baked at 350F for 25 minutes more less.

The Wild Salmon

Baked Salmon  with bit of water so that the salmon will not be burnt,
 then sprinkle the mixed spices on it.
Baked for 15 minutes, bring it out then pour little bit of olive oil or Rice Brand oil then continue bake for about 3 minutes.
Let it out the sprinkle some lemon juice before serving.
I like to sprinkle organic nori from whole food on his rice.

Brown Rice Pasta with Chicken curry

Chicken Curry, Brian's style:

Ingredients :
1/2 lb. chicken, cubed (or more if desired)
2 carrots, sliced
1 TBSP soy sauce
2-3 TBSP curry powder
1 TSP corriander
2 TSP mixed herbs
2 TBSP brown sugar
1 TSP salt
5 cloves garlic, chopped or minced
1/2 small onion, chopped or minced
1 TBSP Olive oil

How to make it :
Slice chicken into desires pieces
Heat 1/4 cup of water in wok or skillet on medium-high heat
Wait until the water boiled then add garlic and soy sauce
Add chicken
Add curry powder,corriander, mixed herbs, sugar and salt
Stir until chicken is completely cooked
Reduce heat, cover and simmer
Feel free to add  any vegetables you'd like
Add additional oil olive for extra flavor.
Enjoy with steam rice or pasta of your choice

Curry Noodle, Brian's style :

Ingredients
8 ounces  whole-wheat noodles
2 tablespoons Olive Oil
2 teaspoons minced fresh ginger
2 cloves garlic, minced
2 tablespoons  soy sauce
1 teaspoon toasted sesame oil
1/4 teaspoon freshly ground pepper
1 teaspoon of curry powder

How to make it :

Bring a large pot of water to a boil. Cook noodles according to the package directions. Drain and rinse with cold water to prevent sticking. Set aside.

Place the cooked noodle all ingredients , mix them throughly in  a safe oven a  broilerproof 8-inch square or a 1 ½-quart baking dish.
Place them in the oven for 15 minutes.
Ready to serve

Salad Dressings

Nutty Dressing:

1/2 cup chopped unsalted
walnuts or pecans
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
1/4 cup orange juice
1/2 teaspoon sea salt

Put all ingredients in a blender or food
processor and mix to desired smoothness. (Add
more nuts or reduce some of the liquids to
make it thicker.) Use on a green salad, as a dip
for raw veggies or crackers, or as a spread on
bread


Italian Dressing Mix:

1 Tablespoon onion powder
1 Tablespoon sugar
2 Tablespoons dried oregano
1/4 teaspoon dried thyme
1 teaspoon dried basil
1 Tablespoon dried parsley flakes
3 Tablespoons sea salt
Dash of garlic powder
Combine all dry ingredients.
Mix 2 Tablespoons of dry mix with:
1/4 cup vinegar
2/3 cup olive oil
2 Tablespoons water
Mix well.

Cancer Update from Johns Hopkins :

1. Every person has cancer cells in the body. These cancer
cells do not show up in the standard tests until they have
multiplied to a few billion. When doctors tell cancer patients
that there are no more cancer cells in their bodies after
treatment, it just means the tests are unable to detect the
cancer cells because they have not reached the detectable
size.

2. Cancer cells occur between 6 to more than 10 times in a
person's lifetime.


3. When the person's immune system is strong the cancer
cells will be destroyed and prevented from multiplying and
forming tumors.


4. When a person has cancer it indicates the person has
nutritional deficiencies. These could be due to genetic,
but also to environmental, food and lifestyle factors.


5. To overcome the multiple nutritional deficiencies, changing
diet to eat more adequately and healthy, 4-5 times/day

and by including supplements will strengthen the immune system.


6. Chemotherapy involves poisoning the rapidly-growing
cancer cells and also destroys rapidly-growing healthy cells
in the bone marrow, gastrointestinal tract etc, and can
cause organ damage, like liver, kidneys, heart, lungs etc.


7.. Radiation while destroying cancer cells also burns, scars
and damages healthy cells, tissues and organs.


8. Initial treatment with chemotherapy and radiation will often
reduce tumor size. However prolonged use of
chemotherapy and radiation do not result in more tumor
destruction.


9. When the body has too much toxic burden from
chemotherapy and radiation the immune system is either
compromised or destroyed, hence the person can succumb
to various kinds of infections and complications.


10. Chemotherapy and radiation can cause cancer cells to
mutate and become resistant and difficult to destroy.
Surgery can also cause cancer cells to spread to other
sites.

11. An effective way to battle cancer is to starve the cancer
cells by not feeding it with the foods it needs to multiply.

*CANCER CELLS FEED ON:


a. Sugar substitutes like
NutraSweet, Equal, Spoonful, etc are

made
with Aspartame and it is harmful. A better natural substitute
would be Manuka honey or molasses, but only in very small
amounts.
Table salt has a chemical added to make it white in
color Better alternative is Bragg's aminos or sea salt.


b. Milk causes the body to produce mucus, especially in the
gastro-intestinal tract. Cancer feeds on mucus. By cutting
off milk and substituting with unsweetened soy milk cancer
cells are being starved.


c. Cancer cells thrive in an acid environment.
A meat-based
diet
is acidic and it is best to eat fish, and a little other meat,
like chicken. Meat also contains livestock
antibiotics, growth hormones and parasites, which are all
harmful, especially to people with cancer.


d. A diet made of 80% fresh vegetables and juice, whole
grains, seeds, nuts and a little fruits help put the body into
an alkaline environment. About 20% can be from cooked
food including beans. Fresh vegetable juices provide live
enzymes that are easily absorbed and reach down to
cellular levels within 15 minutes to nourish and enhance
growth of healthy cells. To obtain live enzymes for building
healthy cells try and drink fresh vegetable juice (most
vegetables including be an sprouts) and eat some raw
vegetables 2 or 3 times a day. Enzymes are destroyed at
temperatures of 104 degrees F (40 degrees C)..


e. Avoid coffee, tea, and chocolate, which have high
caffeine
Green tea is a better alternative and has cancer
fighting properties. Water-best to drink purified water, or
filtered, to avoid known toxins and heavy metals in tap
water. Distilled water is acidic, avoid it.

12. Meat protein is difficult to digest and requires a lot of
digestive enzymes. Undigested meat remaining in the
intestines becomes putrefied and leads to more toxic
buildup.


13. Cancer cell walls have a tough protein covering. By
refraining from or eating less meat it frees more enzymes
to attack the protein walls of cancer cells and allows the
body's killer cells to destroy the cancer cells.


14. Some supplements build up the immune system
(IP6, Flor-ssence, Essiac, anti-oxidants, vitamins, minerals,
EFAs etc.) to enable

the bodies own killer cells to destroy cancer cells.. Other supplements like vitamin E are known
to cause apoptosis, or programmed cell death, the body's
normal method of disposing of damaged, unwanted, or
unneeded cells.


15. Cancer is a disease of the mind, body, and spirit.
A proactive and positive spirit will help the cancer warrior
be a survivor. Anger, un-forgiveness and bitterness put
the body into a stressful and acidic environment. Learn to
have a loving and forgiving spirit. Learn to relax and enjoy
life.


16. Cancer cells cannot thrive in an oxygenated
environment. Exercising daily, and deep breathing help to
get more oxygen down to the cellular level. Oxygen
therapy is another means employed to destroy cancer
cells.

No plastic containers in micro.

2.
No water bottles in freezer.

3.
No plastic wrap in microwave..

Johns Hopkins has recently sent this out in its newsletters. This information is being circulated at Walter Reed Army Medical Center as well. Dioxin

chemicals cause cancer, especially breast cancer. Dioxins are highly poisonous to the cells of our bodies. Don't freeze your plastic bottles with water in them as this releases dioxins from the plastic. Recently, Dr Edward Fujimoto, Wellness Program Manager at Castle Hospital , was on a TV program to explain this health hazard. He talked about dioxins and how bad they are for us. He said that we should not be heating our food in the microwave using plastic containers. This especially applies to foods that contain fat. He said that the combination of fat, high heat, and plastics releases dioxin into the food and ultimately into the cells of the body. Instead, he recommends using glass, such as Corning Ware, Pyrex or ceramic containers for heating food. You get the same results, only without the dioxin. So such things as TV dinners, instant ramen and soups, etc., should be removed from the container and heated in something else. Paper

isn't bad but you don't know what is in the paper. It's just safer to use tempered glass, Corning Ware, etc. He reminded us that a while ago some of the fast food restaurants moved away from the foam containers to paper The dioxin problem is one of the reasons.

Also, he pointed out that plastic wrap, such as Saran, is just as dangerous when placed over foods to be cooked in the microwave. As the food is nuked, the high heat causes poisonous toxins to
actually melt out of the plastic wrap and drip into the food. Cover food with a paper towel instead.

Spinach Apple Salad

2 Tablespoons cider vinegar
2 Tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon sugar
1 cup apple, raw — unpeeled,
diced
1/4 cup sweet onions — chopped
1/4 cup raisins, seedless
2 cups fresh spinach — torn
2 cups romaine lettuce — torn

In a small bowl, combine vinegar, oil, salt, and
sugar. Add apple, onion, and raisins; toss lightly
to coat. Cover and let stand for 10 minutes. Just
before serving, combine spinach and romaine in a
large salad bowl; add dressing and toss.

Pasta salad

6 ounces spaghetti or other pasta
1 clove garlic — minced
3 Tablespoons onion — minced
1/4 cup vegetable oil
1/4 cup white vinegar
1 teaspoon sugar
1 teaspoon dried oregano
1/4 teaspoon black pepper
1 teaspoon salt
1 package frozen pea pods — thawed
1 cup cooked from dried
garbanzo beans
1/2 cup frozen corn — thawed

Cook, drain and rinse pasta. Combine pasta,
beans, corn, and pea pods. Sauté garlic and onion
in oil until tender. Add vinegar, sugar, oregano,
salt, and pepper. Pour over pasta/vegetable mix.
Mix well and refrigerate 6 hours before serving.
Note: Pea pods, beans, and corn may be substituted
with any vegetable you may have on hand. If
you are using fresh vegetables, it is a good idea to
blanch them.

Garlic Chicken with Balsamic Vinegar

1 pound skinless chicken breasts
— thinly sliced
salt
black pepper
4 cloves garlic—chopped
1/4 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
3 Tablespoons fresh parsley
water


Season chicken with salt and pepper. Chop garlic.
Heat 3 Tablespoons oil in large pan; add chicken
and cook turning once until browned. Move to a
plate (leaving drippings in pan). Add remaining
oil and garlic to pan; cook until softened but not
brown, about 1 minute. Add vinegar and water,
bring to a boil, and then boil 1 minute. Stir in
parsley. Return chicken to pan and simmer for 1
minute or until done.

Chicken Ridgewood

2 chicken breasts — boneless
2 medium onions — diced
2 medium green peppers — diced
1 whole garlic clove — chopped
whole wheat flour
Olive oil
sea salt
black pepper


Dredge chicken in flour seasoned with plain sea salt and
pepper. Fry in oil until lightly browned; remove
from pan. Sauté garlic, onions, and peppers until
onions are soft.
Add a little of the leftover dredging
flour.

Put chicken into a covered casserole, pour onion/garlic/peppers
mixture over it, cover, and bake about 45 minutes
at 350 degrees F. Serve over rice or noodles

Chicken Basil

4 Organic chicken breast halves
without skin cut pieces
1/2 teaspoon paprika powder
1/3 cup homade chicken broth
8  of fresh basil leafs
2 Tablespoons olive oil
2 cloves of garlic

Heat 2 Tablespoons oil over medium  heat
in skillet.First stir fry the garlic, then place chicken pieces sprinkle them with paprika.
Add remaining ingredients except the basil leafs .
Bring to a boil; simmer, covered until fully cooked.
Then add the basil leafs at the end, quickly stir.
Serve

Brian Oatmeal Raisins Cookies

1 Organic Egg
21/2 cups raw steel-cut oats
1tsp organic lemon rind, grate
3/4 whole grain pastry flour, shift
1/2 cup raw honey
1/2 cup Olive oil
2 tbsps Lemon Juice
1 cup raisins

Whisk together olive oil and honey. Add an egg and beat them until fluffy.
Add lemon rind and juice. Sift whole grain flour and add oats to the mixture.
Put raisins after that, blend them nicely. Take spoonfull on waxed paper baking sheet.
Bake at 375F for about 15 minutes.

Lemon Pepper Chicken with Whole grain Pasta

1 pound organic boneless, skinless chicken
breast, cut into bite size
chunks
1/2 box whole grain farfalle pasta (bowtie shaped)
concentrated lemon juice
olive oil
salt
black pepper


Once chicken is cut up, dredge lightly in flour. In a
deep skillet, heat approximately 3 tablespoons of olive
oil. Place chicken in skillet, season with salt and black
pepper. Boil pasta in separate pot. As chicken is close
to browning, add approximately 1 cup of lemon juice
, adding a little more black pepper, to taste.
Reduce heat to medium and let
chicken simmer, removing chicken from skillet but not
removing skillet from heat when it is done cooking.
Once pasta is done, drain and add to liquid mixture in
skillet. Add chicken back in to skillet with pasta, adding
a little more of each of the liquids, so mixture does
not burn in pan. Remove from heat and serve.

Lemon Honey Chicken and Brown Rice

14 1/2 ounces organic chicken broth
3 Tablespoons lemon juice
1 Tablespoon honey
olive oil
4 organic boneless and skinless chicken
breast halves
1 cup onions — minced
1 cup rice — uncooked
chopped parsley — optional


Blend chicken broth, lemon juice, and honey; set aside.
Spray a 10-inch skillet with nonstick cooking spray.
Over medium-high heat, brown chicken on both sides;
remove from skillet. In same skillet, cook and stir
onions in 1/3 broth mixture for 3 minutes or until tender.
Add remaining broth, chicken, and rice; heat to a boil.
Reduce heat; cover and simmer for 20 minutes or until
liquid is absorbed. Let stand 5 minutes before serving

Whole grains pasta with Chicken and Peppers

5 Tablespoons olive oil
1 large boneless and skinless
chicken breast, sliced
1 medium onion — chopped
1 medium red bell pepper — julienne
style
1 medium green bell pepper — julienne
style
1 clove garlic — minced
1/2 teaspoon ground red pepper
2 large tomatoes — chopped
3/4 pound pasta — tubes, as in penne


Heat 2 Tablespoons olive oil over medium heat in
large skillet. Cook and stir chicken until tender.
Remove. Set aside. Add 2 Tablespoons olive oil to
skillet. Cook and stir onion and bell peppers until
tender. Return chicken to pan. Add garlic and ground
red pepper. Cook 3 minutes, stirring constantly. Add
tomatoes; simmer for 10 minutes. While chicken
mixture in simmering, cook pasta according to
directions. Do not overcook. Drain and toss with
remaining tablespoon of olive oil. Serve chicken
mixture over pasta

Immune System Builder Foods - ORGANICs are always better (it's just simply a fact)

These are based on Great Research, I am not forcing anyone to follow what I typed here, they are just simply Great Facts that I want to share

Berries all kinds

Lots of research have found that all kinds of berries are health beneficial and They have some of the highest antioxidant levels  (ORAC) of any fresh fruit. Fresh berries are powerful diasease fighting foods available.
ex:  blueberries, strawberries, raspberries, blackberries, etc

Carotene Vegetables and Fruits

Carotenoids are red, yellow and orange Vegetables or Fruits. They are known to be a potent booster for the immune system
ex: Carrots, Sweet potatoes, mangoes, persimon, etc

Lycopene Vegetables and Fruits

Early research both scientific and clinical has suggested lycopenes may help prevent cardiovascular disease, diabetes, cancer and osteoporosis. Lycopene has even been found to have an inhibitory effect on cataract development and some rare cancer cells.
ex: carrots ,watermelons and papayas . Although lycopene is chemically a carotene, it has no vitamin A activity.

Citrus Fruits

Citrus fruits are a rich source of vitamins, minerals, fiber and phytochemicals. Citrus fruits are not only loaded with vitamin C, they also strengthen your immune system.

Cruciferous Vegetables

The cancer protective properties of crucifers such as broccoli, Brussels sprouts, cauliflower, cabbage, and kale are attributed to the fact that these foods contain substantial quantities of the phytonutrients called isothiocyanates, specifically two isothiocyanates called sulforaphane and indole-3-carbinol. Research indicates that sulforaphane has the ability to increase the capacity of the liver to detoxify harmful, cancer-causing compounds.

Flax Seed

Flaxseed contains all sorts of healthy components, Primarily has  three ingredients:
  • Omega-3 essential fatty acids, "good" fats that have been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s.
  • Lignans, which have both plant estrogen and antioxidant qualities. Flaxseed contains 75-800 times more lignans than other plant foods.
  • Fiber. Flaxseed contains both the soluble and insoluble types.

Garlic and Onion

These natural foods are full of chemicals that can help protect a person from a variety of infections, diseases and illnesses. Garlic and onions help to protect against cardiovascular disease, respiratory concerns, diabetes, and a variety of cancers.
Onions decrease the risk of many different types of cancers. A compound known as quercetin has been discovered in onions and this compound is extremely powerful when it comes to fighting cancer and is an excellent antioxidant

Green Tea

It is believed to have polyphenols in it which helps it burn the calories and maintaining the heat of the body. The leaves contain EGCG which helps the body to fight the cancer cells and minimize stroke risk.The study also shows that Green tea has satisfying effects on hypertension and cholesterol.

Beans

Nutritional benefits of beans: beans have been proven to be a mojor player in the fight against cancer. Beyond that, they are high in protein,beneficial to those with diabetes, and help lower cholesterol.

Mushrooms

Mushrooms are an excellent source of potassium, a mineral that helps lower elevated blood pressure and reduces the risk of stroke. One medium portabella mushroom has even more potassium than a banana or a glass of orange juice. One serving of mushrooms also provides about 20 to 40 percent of the daily value of copper, a mineral that has cardioprotective properties.
Mushrooms are a rich source of riboflavin, niacin, and selenium. Selenium is an antioxidant that works with vitamin E to protect cells from the damaging effects of free radicals. Male health professionals who consumed twice the recommended daily intake of selenium cut their risk of prostate cancer by 65 percent. In the Baltimore study on Aging, men with the lowest blood selenium levels were 4 to 5 times more likely to have prostate cancer compared to those with the highest selenium levels





Our Story

Christmas 2006, Brian was still on Chemo treatment





Brian said, " Daddy will you shave your hair ?"
Daddy said. " Ok, how about mommy ? will she shave too? "
Brian said, " No, she is a girl , she will looks ugly !"
hahahaha that's my baby ^^ I love you Brian ....


Brian was 4 years old and 9 month when he was diagnosed with brain cancer

Praise The Lord for His mercy and grace
Brian is now 10 years old and doing well



Our son Brian was diagnosed with medulloblastoma, at age 4.9.
Medullo tumors account for 20 % of pediatric brain tumors.

Praise The Lord !  the tumor was completely removed on July 31' 2006
3 weeks after resting period , He did 6 weeks of radiation,
2340 Cgy full brain and spine with a "boost" to the tumor bed to 5580.

Thank God that He was able to do the full 9 cycles of  Chemotherapy protocol accordingly well. I thank God for that, Brian didn't have major complications during  the chemo. I know Jesus has been there for us during the tough time and present.
Brian finished the Chemo treatment on Sept 23' 2007. Total of 15 months treatments.

Brian started his Sythroid and Growth Hormone in October 2009 because of the radiation late side effect.

As for the MRI on July 2014, Brian remains diasease free. Brian has been on healthy diet since the cancer treatment began. I would like to share his recipes and supplements which I think they contribute positively in his health during the treatment and surviving days.

 I hope this blog will help others who may go through the same as ours. I want to say to you that to ask God for His Mercy, Strength, Protection and Guidance !  Don't turn away from Him as He is our only true Hope.

I praise The Lord Jesus for Brian ! He is doing well in life, there are several things of side effects from radiation and treatment that we are dealing now. However, Brian is alive and happy, It means so much to me personally. I count my blessing everyday. Just for doing a small thing such as going to a park or watching TV with him are treasure time to me.

One of the prayers that Brian and I have been praying everynight for several years now:

Psalm 103 : 1-5

1 Praise the LORD, my soul;
all my inmost being, praise his holy name.

and forget not all his benefits—

and heals all your diseases,
4 who redeems your life from the pit
and crowns you with love and compassion,
5 who satisfies your desires with good things
so that your youth is renewed like the eagle’s.

Brian Supplements

Brian has been using supplements 3 months after he finished his chemo treatment. He starts his supplement protocol on January 2008. We contacted the well known nutrionist specialized in brain cancer, her name is Dr. Jeanne Wallace. The supplements that Dr. Wallace have suggested to Brian, I believe these supplements have help Brian's  recovery from the treatment and his health in general.
